3/4 c sugar 1 c sugar, brown 1 csoftened butter 2 c flour 1/2 t salt 1 t baking soda 1/2 t baking powder 2 ea egg 1 t vanilla extract 2 cdivided oatmeal 1 cunsweetened (if available) coconut 2 c chocolate chips, semisweet
Cream together sugars and butter.
Sift together flour, salt, baking powder and baking soda. Add to creamed mixture.
Add eggs, vanilla, 1 cup oatmeal, coconut and chocolate chips.
Add remaining oatmeal and stir well.
Roll into balls, roll in white sugar and place on cookie sheet. Flatten with glass.
Bake 350 degrees F. for 15 minutes. Remove to cooling rack to cool.
OPTIONAL: Roll dough into 1 inch "logs". Place in freezer in freezer bag until need fresh cookies. Defrost and cut logs into slices before cooking.
