1 1/4 c flour 3/4 t baking soda 1/4 t salt 1/2 cbutter or margarine 1/2 c peanut butter 1/2 c sugar 1 ea egg 1/2 t vanilla extract
Stir together flour, soda, and salt.
Beat butter, peanut butter, and sugars until fluffy. Add egg and vanilla, beat well.
Add dry ingredients to beaten mixture, beat until well combined.
Chill dough. Shape dough into 1 inch balls.
Place 2 inches apart on ungreased sheet. Crisscross with fork tines.
Bake in a 375 degree oven about 10 minutes. Cool 1 minute before removing to wire rack.
OPTIONAL: HONEY PEANUT BUTTER COOKIES
Follow recipe using only 1/4 c shortening and use 1/2 c honey in place of brown sugar.
