Ingredients
                
1/2 c
softened coconut oil

1 c
unsweetened Dates, dried

1/2 c
almond flour

1/2 c
with xanthum gum flour, gluten free

1/4 t
salt

1/2 t
baking soda

1/4 t
baking powder

1 ea
egg

1 c
gluten free oatmeal, old fashioned

1/2 t
vanilla extract

1/2 c
unsweetened coconut flakes

1 c
chocolate chips, mini


Directions
Put dates in food processor and process until small pieces.  You can replace dates with sugar if desired.

"Cream" dates with coconut oil (can replace with butter if desired).

Add almond flour, GF flour (or use 1 cup GF flour total), salt, baking soda and baking powder.

Add egg, 1/2 cup oatmeal, vanilla, coconut and chocolate chips.  Stir well then add remaining oatmeal.  It may be hard to stir it all in.

Roll into balls, flatten with glass dipped in sugar (coconut sugar is really good here!).

Bake on parchment paper in preheated 350 degree oven for 15 minutes. 

Cool slightly before removing to wire rack to cool.

OPTIONAL: Use up to 1 cup of mix ins like cacoa nips, M&M's or dried fruit in place of chocolate chips
