2 ea6 inch cinnamon sticks 18 ea Allspice, whole 5 ea cardomom pods 15 ea cloves 15 eaor 25 peppercorns, black 2 t ginger, powdered 1 pn1/8 tsp nutmeg 6 T Rooibus tea 1 T vanilla extract 1/4 csweetner of choice sugar
Optional; Replace loose leaf Rooibus for 6 tea bags or 6 Darjeeling tea bags.
Use more or less spices according to taste.
Put cinnamon and ginger in large pot.Gently crack remaining spices using mortal and pestle or spice grinder. Add to pot along with 6 cups water.
Bring to a boil, then simmer 25 minutes. Strain to removed all sediment. Add vanilla. Mix in sweetener of choice.
Store concentrate in refrigerator in large mason jar. It will stain plastic.
To use, combine milk of choice in a 1:1 ratio. Add a few ice cubes if you want an iced drink. Warm up if you want a warm drink.
