8 ozsoftened cream cheese 2 c sugar, powdered 2 c chocolate chips, semisweet 1 1/2 t vanilla extract 2 T heavy cream (optional)1 c peanut butter (optional)2 T raspberry preserves (optional)1 c chocolate for melting 2 c dark chocolate chips
Melt chocolate chips your favorite way.
Beat cream cheese until smooth. Add powdered sugar and beat until smooth. Stir in melted chocolate and vanilla until no streaks remain.
Chill until firm. Shape into 1 inch balls. Chill again.
Melt dark chocolate chips and melting chocolate in double boiler. Dip truffles balls and set aside to cool. Redip if desired.
Optional: Add peanut butter with first batch of chocolate. Decorate top with peanut butter glaze.
Option 2: Add favorite preserves with first batch of chocolate. Decorate top with red sugar.
Option 3: Replace vanilla extract with peppermint extract, almond extract or other favorite alcohol based flavoring. Do NOT use water based flavorings.
Option 4: Roll ball around almond or hazelnut. Sprinkle top with ground nuts.
Option 5: Instead of dipping in chocolate, roll in ground nuts, cocoa or powdered sugar.
