2 1/2 t active dry yeast 1/2 c warm water 1 T sugar, granulated 3 1/4 c flour, all purpose 1 t salt, Kosher 2 T butter, unsalted 1/2 c olive oil 1/2 cscalded milk
Sprinkle yeast in warm water and sprinkle with a pinch of sugar. Let sit until foamy. In another bowl combine sugar, flour and salt. Cut in butter until it resembles coarse crumbs. Add the yeast mixture, milk and olive oil. Combine to form a soft dough. Add flour if needed. Knead 3 to 5 minutes until smooth and elastic. Add flour if needed. Grease a large bowl and place dough in bowl, turn once to coat. Let rise until doubled, punch dough down. Divide dough into 8-10 pieces and form rolls. Place on baking sheet lined with parchment paper lightly dusted with flour. Cover with damp cloth and let rise till doubled. Bake in preheated 375 degrees for 20 to 30 minutes until toothpicks inserted comes out clean. Tops will be golden.
