2 1/2 c flour, all purpose 1 1/2 cto 2 cups sugar 1 t baking soda 1/2 t salt 1 T pumpkin pie spice 2 ea egg 1 c canned pumpkin 1/2 c oil, canola 2 cpeeled and finely cut apple 2 T flour 1/4 c sugar, granulated 1/2 t ground cinnamon 4 T butter
Combine 2 Tablespoon flour, 1/4 cup sugar, cinnamon and margarine. Set aside for topping.
Combine remaining dry ingredients. Add eggs, pumpkin and oil. Mix just until moist. Stir in apples.
Fill greased or lined muffin pans 3/4 full of batter. Sprinkle topping over muffins.
Bake at 350 degrees for 30 or 40 minutes or until toothpick inserted in muffin comes out clean.
Cool on wire racks.
