1/2 c butter, unsalted 1 c oatmeal, rolled oats 1/2 c sugar, demerara 1 t ground ginger 1 t golden syrup
May want to experiment with a little less butter. Preheat oven to 325 degrees F. Mix butter, sugar and syrup together in a small sauce pan and heat gently until the sugar has melted. Remove the pan from the heat and stir in the oats and ginger. Mix well. Press mixture into a greased 8 inch pie pan and bake for 15 to 20 minutes. Allow to cool then cut into slices or wedges. Serve warm (with ice cream?) or cool.
