1 eawhole head garlic 1 c ricotta cheese 1/4 t black pepper
Preheat oven to 375 degrees F. Wrap the garlic in aluminum foil; set on middle oven rack, roast one hour. Remove from oven and cool.
Separate garlic into cloves. Pinch each garlic clove so that the roasted flesh slips out.
Add ricotta cheese, pepper and garlic to blend and puree.
Transfer to small bowl to serve.
Good as vegetable dip!
