5 eafresh, chopped tomato 1 eadiced onion, yellow 1 T ghee 1/2 t Fresh ground ginger root 1 tIndian chili chili powder 1/2 t coriander, ground 1/2 t turmeric powder 1 dsto taste salt 1 lb chicken (optional)5 clvpounded garlic
Fry the onions in hot ghee until they start to brown, do not over cook!
Stir in ginger and garlic, stir and then add powdered spices. Blend well.
Add tomatoes and salt to taste. Turn heat to medium, cover and simmer 10 minutes. If using chicken, simmer until chicken is cooked.
This gravy can be used over vegetables or eaten plain with rice.
Optional: Add ground cloves and cinnamon to taste.
