1 cunsalted Cashew 1 T olive oil 2 c chicken breast 1 clv garlic 1 c mushrooms, sliced 1 bn onion, green 1 ea red bell pepper
All ingredients are to your taste! This is a salty dish, but tastes very good.
Can replace green onions with white onions, but the green ones are prettier with a milder flavor. Omit mushrooms if desired.
Saute unsalted cashews in oil. Set aside.
Saute chicken until cooked, add remaining ingredients except cashews and onions. Add soy sauce to taste, simmer. Add more soy sauce if becoming dry.
Serve over rice. Garnish with green onions and cashews.
