2 Teaspoon(s) ground cinnamon
1 1/2 Teaspoon(s) ground cloves
1/2 Teaspoon(s) nutmeg
1/2 Teaspoon(s) ground ginger
1/2 Teaspoon(s) Cardamom, ground
Combine all ingredients and store in an airtight container.
Cookies, Lebkuchen (German Spice) (
Add to shopping list ) :
1 Cup(s) plus 2 Tablespoon honey
1 Teaspoon(s) Lebkuchen spices
1 Tablespoon(s) cocoa powder
1 Tablespoon(s) a little less baking soda
1 Cup(s) plus 2 tablespoon brown sugar
1/2 Cup(s) butter, unsalted
3 Cup(s) flour, all purpose
1/2 Cup(s) almond, ground
Heat the honey, butter and sugar in a pan over low heat until sugar has dissolved. Cool.
Add remaining ingredients and mix well. (You may want to experiment with baking soda, it can be a little strong tasting)
Knead thoroughly, adding a little flour if needed.
Wrap in aluminum foil or plastic wrap and place in refrigerator overnight.
Preheat oven to 375 degrees.
Knead dough again and roll out on powdered sugar board till about 1/2 cm thick.
Cut out with cookie cutters, bake on parchment lined cookie sheet for about 15 minutes.
Decorate if desired.
To store cookies, do not close lid tightly. Place a piece of apple in tin to keep lebkuchen chewy. Replace apple every few days.
Original recipe calls for
250 g honey
250 g brown sugar
100 g butter
400 g flour
100 g ground almonds
1 Tablespoon pottasche (potassium carbonate) instead of baking soda. Dissolve in 2 Tbl water before adding to cookie recipe.
